Any thoughts on the practice of cooking under tents? Specifically, tents used as assembly or mercantile occupancies (not camping). Life Safety Code and NFPA 96 appear to allow cooking under tents if the cooking equipment meets NFPA 96 requirements for hood and extinguishing systems, unless specifically exempted by the AHJ. However, our town has adopted BOCA Fire Prevention (1999 Ed.) and it specifically prohibits cooking appliances fired by gas, gasoline, or charcoal under or within 20 feet of a tent.
Now--- has anyone ever seen a cooking setup under a tent that included the hood and extinguishing system?
If the equipment was provided, would you feel that it eliminates enough of the hazard to allow the cooking?
I'm not just talking about a gas grill under the tent, we have at least one event in town every year where they set up a full-blown restaurant under there (grills, fryalators, ranges, etc.).
Please comment.

You asked for my opinion, now you have it. It's mine and mine only. Any similarity to another opinion...living or dead...is purely coincidental.
