Thank you firecat. The recipe is very easy. I just use some of the steelhead and prawns we cook off. Break the steelhead into large chunks and cut the prawns in half (we use large prawns.). Chop some fresh dill, parsley, basil and add to seafood. Add fresh lemon juice, a little lemon zest and some canola /olive oil. Toss lightly., you don't want to break up the steelhead too much. Season to tested with salt and pepper. I like to serve it over a bed of arugula.
