Does a standard exist or law concerning the cooking of french fries in mobile catine (mobile restaurant on wheels, like a stand) at ground fair or other public exhibitions. Are they obligated to use the deep fryer for make french fries such as in building.

Time calculation for Drills?
I am trying to find out if there is a set calculation for the allowed time in a fire drill. I know how to determine capacities, loads, ect. ect, but cant find a set calculation for determining a reasonable standard time limit for an actual drill? Are there any? what are they?
