Sprinker Systems/FDCs
Just because it's called a throw bag, doesn't mean you throw the whole bag... you're supposed to hold onto the rope.

Go to the NFPA and the Uniform Fire Code National Standard. It should be all in there.

The standard you are seeking is NFPA 13, Standard for the Installation of Sprinkler Systems. It covers the sprinkler system and FDC's. The Fire Code adopted in your jurisdiction may have additional requirements (The Uniform Fire Code has not been adopted in all parts of the country).
The flow rate and pressure requirement for the system is determined by hydraulic calculations. The required flow and pressure at the connection to the street is calculated and posted on the riser (although many times only the flow and pressure required at the base of riser is posted).
Older systems (any prior to 1971 and some after that) are "pipe schedule" systems. Pump it at 150 psi.
If you are interested in fire department operations at buildings protected with sprinkler systems, use NFPA 13E.
