I recently re did my counters in my house. I have an island in the middle.
In the old island I cut a hole in the middle for the trash (can underneath). To hide the un-finished edge, I bought plastic L beams that were made to cover up un-finished edges, they were glued down or you can use adhesive tape.
Since replacing the counters, The old plastic pieces were accidently thrown away. I cant remember where I bought them and cant find them anywhere. Has anyone seen something similar to the L beams.

Mikey, have you checked with your local building supply sotr (sounds like you may have)? If they don't have them, thye may be able to special order them. It sounds like a common building material, so I'm suprised your having such a problem finding them. One other thing you could do is "finish" the edge with a small strip of linoleum(sp?)
