    Phyllo wrapped scallops
    pan seared scallops wrapped in phyllo pastry with baby tomatoes and herbs and baked till golden

    Chicken breasts with shallots and mushrooms
    saute boneless chicken breasts, remove from pan then saute cremini mushrooms, shallots, add white wine, dijon mustard, freshly ground pepper and salt and reduce sauce down. Serve over chicken breasts

    Cheffie: I actually started to use my convection oven!! I have done a chicken, a rib roast, and the leftovers from the rib roast. AMAZING!! (especially since I can't cook!!)

    Had chops, corn, potatoes and cajun shrimp for lunch after EMT class today (which passed for dinner last night too)
