Faulty Recipe Results In Burns, Magazine Recall

Southern Living magazine is warning readers not to follow a recipe printed in their April 2004 issue because an error in the instructions has led to at least five cases of minor burns.

"There were reported incidents of minor burns and one instance of an ignition," said Martha Johnston, the magazine's vice president for food marketing.

Johnston said the instructions for "Icebox Rolls" were misinterpreted during the magazine's editing process, posing a fire and safety hazard to readers.

The recipe mistakenly directed readers to boil one cup of water with a half cup of shortening for five minutes, which can cause the melted shortening to rise and trap the boiling water underneath. "This mixture can become unstable," Johnston said. "It starts splattering and popping and can become combustible."

The magazine recalled the April issue from newsstands, their first recall in the magazine's 38-year history. "We hope never to have another one," Johnston said. They normally sell about 250,000 newsstand issues per month.

Johnston said they also sent out a nationwide press release and placed a warning and the corrected recipe on their website. In addition, they e-mailed as many of their subscribers as possible and mailed out postcards to all 2.4 million subscribers.

Johnston said the magazine will also print the corrected recipe in their May issue.

The correct recipe instructs readers to pour boiling water over shortening in a bowl in order to melt the shortening, and then to let the mixture stand for 30 minutes or until completely cool.
