A man went into the Jimmy Johns restaurant on Stanley Road Monday, poured gasoline on the counter and register and threatened to ignite it if he wasn't given money, Greensboro police said.
Police said the man, later identified as Jon Newell Daniels, 40, grabbed the entire register and drove away in a gray SUV with Virginia license tags.
Daniels' vehicle was later spotted at the Cavalier Inn on West JJ Drive.
When officers attempted to arrest Daniels, police said, he barricaded himself in the bathroom, told officers he had a gun and set the bathroom ablaze.
Officers were forced to leave the room and Daniels eventually came out after being overcome with smoke and fumes, police said.
He was served an outstanding warrant for fraud and charged with arson.
He was taken to Moses Cone Hospital for treatment of smoke inhalation and later transferred to Wake Forest University Baptist Medical Center.
Police said the robbery remains under investigation.
